I’ll Admit…
Once I discovered how easy it is to make my own creamy cashew milk at home, I haven’t gone back to store bought. This dairy free milk is delicious and customizable! You literally just need cashews and water to make the simplest version. Soak raw and unsalted cashews in water overnight and they’ll be soft, plump, and ready to blend in the morning. I love to add a pinch of sea salt, vanilla extract, and some honey for natural sweetness but these ingredients are all optional.
With only my husband and myself in the house I find the below amount to be perfect for the two of us to last for the week. You can double or halve depending on your needs.Since this is a no strain recipe there will be naturally occuring sediment and seperation so shake before each use. Because there are no preservatives, I find that it is good for about 5-7 days. When it starts to smell a little sour like yogurt, thats when know its time to make a new batch if we haven’t already used it all. Cashew milk is great in coffee and smoothies. I also use it to bake with in place of milk!
Since I like to always have fresh cashew milk stocked in the fridge I find it most cost effective to buy the cashews in bulk. I buy this 2.5 LB bag of organic unsalted unroasted cashews from Costco and its only $16.99! This bag can yield 16 bottles of the recipe below bringing the cost to only $1.06 per bottle!

Cashews are high in protein and antioxidants. They are actually seeds(not nuts) that grow at the bottom of the cashew fruit.
Ingredients!
- 1/2 cup unsalted unroasted cashews
- 2.5 cups water
- 1/2 teaspoon vanilla extract (optional)
- 1 tablespoon honey (optional)
- Pinch of sea salt (optional)
Instructions:
- Place cashews in a bowl and fill with water. Cover and soak 6 hours to overnight in the refrigerator.
- The next morning the cashews should look plump. Drain and rinse.
- Place all ingredients into a high powered blender and blend on high until completely blended and creamy with no chunks left. I use the Vitamix and work my way up the the HIGH setting. It takes under 1 minute to blend thoroughly.
- Pour the creamy cashew milk into bottle and refrigerate for up to 7 days. Shake well before each use.
- Enjoy in coffee, tea, smoothies, baking, or even by itself!

- 1 bottle or container holding up to 1 liter
