Make this instead of store-bought rotisserie chicken, that’s full of additives and injected solutions. Perfect for recipes like chicken salad.

Ingredients:
1 whole chicken (3–4 lbs)
2 tablespoons olive oil
1 cup of lemon garlic butter
3 lemons
1 head of garlic

Lemon garlic butter:
8oz softened salted butter
Zest of 1 lemon
5 garlic cloves grated
1 tsp onion powder
1 tsp salt
1 tsp mustard powder 
1/8 cup chopped parsley

Instructions:
1. Preheat oven to 425°F (220°C).
2. Line a baking dish or skillet with lemon slices.
3. Pat chicken dry, stuff the cavity with halved lemon and garlic head.
4. Loosen the skin and rub some under it; spread the rest over the outside.
5. Drizzle with olive oil and place breast-side up over the lemons.
6. Roast 1–1½ hours, basting every 30 minutes, until internal temp reaches 165°F.
7. Let rest 15 minutes before carving.
*Let chicken sit out at room temperature for about 30 minutes for a more even cooking.

This recipe is inspired by my friend’s @glitterandchopsticks I never heard of swim biscuits until she shared her recipe! And now I know why they’re called swim biscuits because they be swimming in butter that somehow magically absorbed by the batter. 😍🏊🏼‍♀️

Ingredients
Biscuits:
1 cup fresh blueberries
Zest of 1 lemon
1/4 cup granulated sugar
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 1/4 cups buttermilk
1 teaspoon vanilla extract
1/2 cup butter, melted

Glaze:
1 cup powdered sugar
Juice of 1 lemon

Instructions
Preheat oven to 450°F.
1. Pour the melted butter into a 9x9-inch baking dish.
2. In a large mixing bowl, Combine dry ingredients.
3. Add buttermilk and vanilla extract. Gently stir until just combined. Then stir in blueberries and lemon zest.
4. Pour the batter into the baking dish directly over the melted butter.
5. Use a knife to score the top into 9 squares, cutting all the way through so the butter rises and absorbs into each section.
6. Bake for 30 minutes, or until golden brown and fully cooked in the center.
7. While the biscuits bake, whisk together powdered sugar and lemon juice to make the glaze.
8. Drizzle glaze over warm biscuits and serve.

Homemade Chipotle Vinaigrette that’s better than Homemade Chipotle Vinaigrette that’s better than Chipotle’s 🌶️🫙🔥
This super easy copycat recipe of Chipotle’s vinaigrette is one of my favorite sauces to have in the fridge. You can put it over salads, tacos, bowls, and sandwiches. I promise you won’t regret making it. 🤌🏽

Ingredients:
1/4 cup red wine vinegar
3 Tbsp honey
1/4 cup water
1/2 cup neutral oil (I use avocado oil)
1/2 Tbsp salt
1/2 tsp. ground black pepper
1/4 tsp. dried oregano
2 garlic cloves
2-3 chipotle peppers in adobo sauce(the more, the spicier)
Juice from 1/2 lime

-Add all ingredients into a blender and blend until thickened and combined.
-Store in an airtight container in the fridge for up to a week. If it lasts that long 🙃

Calabrian Chili Ricotta Pasta w/ Shrimp 🦐🍋🌶️

Ingredients:
1 lb shrimp peeled and deveined 
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive oil 
1/2 lemon juiced
1/2 onion diced
Zest of 1/2 lemon
3 cloves of garlic minced
2-3 tablespoons Calabrian chili paste
15 oz ricotta 
1/4 cup parsley chopped
8 oz pasta 
1/4 cup or more reserved pasta water
Parmesan cheese for topping 

Instructions
1. Pat shrimp dry and toss with garlic powder, salt, and pepper.
2. In a large skillet, heat olive oil over medium-high heat. Add shrimp and lemon juice, cook until pink and just cooked through. Set aside.
3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain.
4. In the same skillet, sauté the diced onion and garlic until softened. Turn off the heat and stir in ricotta, lemon zest, Calabrian chili paste, and a pinch of salt. Mix until smooth.
5. Add the cooked pasta, half the shrimp, and reserved pasta water to the sauce. Toss until evenly coated and creamy.
6. Top with the remaining shrimp, freshly grated Parmesan, chopped parsley, and lemon slices if desired. Serve immediately.

Infused with a homemade basil simple syrup, this version is the ultimate sip for spring. 

Ingredients: 
2 oz limoncello
1 oz basil simple syrup
4 oz Prosecco
Club soda to top
Ice cubes
Fresh basil leaves and lemon slices, for garnish

Basil Simple Syrup:
1 cup water
1 cup granulated sugar
1 cup fresh basil leaves, packed

-Make the Basil Simple Syrup: Boil 1 cup water and 1 cup sugar until dissolved. Remove from heat, add 1 cup fresh basil, and steep for 30 minutes. Strain and cool.
-Mix the Cocktail: In a glass, combine 2 oz limoncello, 1 oz basil syrup, and ice. Add 3 oz chilled Prosecco and a splash of club soda.
-Garnish and Serve: Top with fresh basil and a lemon slice.

This insanely flavorful and creamy stroganoff comes together in one pan. Served with rice and crispy potato sticks, it’s the ultimate Brazilian Comfort food! ❤️‍🔥

Ingredients:
* 1 Tbsp olive oil
* 2 lbs chicken breast cut into bite sized pieces
* 2 tablespoon of butter
* 1 medium onion, diced
* 4 cloves of garlic, minced
* 8 oz white or cremini mushrooms, sliced
* 6 oz tomato paste
* 1 teaspoon sugar
* 1 tablespoon balsamic vinegar 
* 2 cups heavy cream or coconut milk
* salt and pepper to taste

Crispy potato sticks:
1 shredded russet potato or pre shredded hashbrowns
2 tablespoons cornstarch to coat
Pinch of salt

Instructions:
1. Season chicken with 1/2 tsp salt and 1/2 tsp pepper. Let sit at room temp for 30 mins.
2. Sauté onions in 2 tbsp butter until translucent. Add chicken and garlic, cook until chicken is browned.
3. Stir in mushrooms and cook until softened.
4. Add tomato paste, sugar, and balsamic vinegar. Stir, then slowly add cream or coconut milk for a creamy sauce.
5.Simmer on low for 10-15 mins until chicken is cooked through and sauce thickens. Adjust salt and pepper (suggested: 1 tsp salt, 1/2 tsp pepper).
6.Optional Topping: Fry shredded, cornstarch-coated potato with salt until crispy, or use store-bought potato sticks.

Fresh carrots gives this cake its natural orange color. Topped with a rich chocolate ganache, this is hands down my favorite cake of all time! My husband introduced me to this 🇧🇷 cake (aka Bolo de Cenoura in Brazil) when we first met and it may or may not be the reason I married him 🙃

This cake recipe comes together so easy in a blender. Yes, a blender! 

Ingredients:
* 11 oz carrot chunks
* 3 large eggs
* 1.5 cups of sugar 
* 1 teaspoon vanilla extract
* 1/3 cup of milk, any kind (I use my homemade cashew milk)
* 3/4 cup of olive oil
* 2 tablespoons Greek yogurt, sour cream, or crème fraîche
* Pinch of Salt
* 2 cups of all-purpose flour, sifted
* 1 tablespoon of baking powder, sifted
* 1 teaspoon baking soda, sifted
* A pinch of salt
Chocolate Brigadero Ganache:
* 6 ounces of semi sweet chocolate 
* 1 can, 14 ounces sweetened condensed milk
* 2 tablespoons unsalted or salted butter, I prefer salted
* Splash of milk

1)Preheat oven to 350°F and grease a 10-inch bundt pan.
2)Blend carrots, eggs, sugar, milk, vanilla, and salt until smooth (20–30 sec).
3)Pour into a bowl, whisk in oil, then sift in flour, baking powder, and soda. Mix until just combined.
4)Pour batter into pan and bake for 45 minutes or until a toothpick comes out clean.
5)Cool 20–30 minutes, loosen edges, and invert onto a rack.
6)For brigadeiro: cook chocolate, sweetened condensed milk, and butter over medium-low, stirring until thick (about 10 min). Add milk if needed.
7)Place cake on a platter, pour brigadeiro over, and in the center to make a chocolate pool. Let set before serving.

Grilled Romaine with blue cheese, candied pecans, Grilled Romaine with blue cheese, candied pecans, and champagne vinaigrette paired with @ranchersdaughtersreserve grass fed top sirloin 👌🏽

I wanted to recreate this salad I had years ago at @yardhouse -one of the most impressive combinations that I can’t stop thinking about even after all these years. And I had to pair it with my favorite Kauai grass fed beef for some added protein. 

Grilling the romaine gives it a nice charred flavor paired with creamy blue cheese and sweet candied pecans, and elevating it with a champagne vinaigrette… I can’t even explain how this taste just trust!!!

I hope you LOVE it as much as I do!

Ingredients:
1 head of romaine lettuce
Blue cheese 
Candied pecans
Champagne vinaigrette(I use Girard’s)
1 10 oz top sirloin steak
Olive oil 
Salt and pepper to taste
2 tablespoons avocado oil
garnish with fresh thyme. 

Romaine:
-wash, dry and cut in half
-brush with olive oil
-sear each side on medium high for two minutes and set aside

Top Sirloin:
-Bring to room temperature and sprinkle fresh, grated sea salt, and black pepper on both sides
-Coat with olive oil
-Heat a neutral oil like avocado oil on high in a cast iron skillet.
-For medium rare, sear one side for three minutes then brown the edges. Flip and cook the other side for 2-3 minutes and let rest for 10 minutes before slicing.

These are hands-down, the best I’ve ever had! Sweet, salty, nutty, and full of umami 😘🤌🏽

They are so easy to make, coming together in under 10 minutes. Give them a try and let me know what you think 👇🏽

Ingredients:
1 stick 4 tablespoons unsalted butter
1 tablespoon miso
1 bag of mini marshmallows (10oz)
6 cups Rice Krispies
2 tablespoons furikake (optional)

1)Line 8x8 baking pan with parchment paper 
2)Brown butter on low heat and mix in miso paste, then add in and melt the marshmallows. Turn off heat.
3)Pour in the Rice Krispies and furikake and mix to combine.
4)Spread evenly in the lined baking pan and push down to compact let cool,cut,and enjoy!

The perfect spring appetizer for your next gathering or something special to self indulge 😘🤌🏽

Ingredients:
2 cups cherry or grape tomatoes 
2 tablespoons minced garlic
1/4 cup olive oil 
Fresh thyme
1/2 tsp red chili flakes 
1/2 tsp smoked paprika 
A pinch of sea salt
1 cup or more ricotta 
Salt and pepper to taste

-Combine the first 7 ingredients and roast uncovered in the oven at 300F for 1 hour 
-Broil on low for an additional 3 to 5 minutes for a charred look 
-Spread the ricotta on the bottom of a serving dish. Sprinkle salt and pepper and top with the roasted tomatoes.
-Serve with a toasted baguette or crackers

*Cooking low and slow and ensures that the tomatoes and garlic don’t burn and brings out the tomatoes natural sweetness.

Chicken cutlet salad 🍗🥗 A juicy, crispy frie Chicken cutlet salad 🍗🥗
A juicy, crispy fried chicken cutlet topped with your favorite salad and a squeeze of lemon. It’s hard not to get addicted to this one! 

Ingredients
Cutlets:
1 chicken breast cut in half and flattened 
1/3 cup each: AP flour, heavy cream, panko breadcrumbs 
2 cup avocado oil 
Seasoning:
1tsp each: salt, ground, black pepper, mustard powder, smoked paprika, garlic powder.
Salad:
Romaine lettuce thinly sliced
1/2 shallot thinly sliced
Chopped parsley
Caesar dressing
Grated Parmesan 
Lemon wedges

1)cut the chicken breast in half and flattened with a meat tenderizer. Cutlet should be 1/2 of an inch or less thick.
2)season each side with seasoning mix
3)set up your dredging station and completely coat each cutlet with flour, heavy cream, then panko. Let’s sit for at least 15 minutes for the coding to adhere.
4)heat oil on medium high until 375F. Carefully place each cutlet in the oil and let cook for about three minutes on each side until the crust has become golden brown and chicken has internal temperature of 165F.
5)remove from oil and place on a paper towel lined plate. Immediately sprinkle salt. And let cool for 5 minutes.
6)Combine all salad ingredients and place desired amount on top of chicken. Top with freshly grated Parmesan and a squeeze of lemon.

* I’ve been using heavy cream as a substitute for egg wash, and I must say I like it better. It tenderizes the chicken a little bit more, leaving it juicy and soft. But if you don’t have heavy cream, you can use an egg wash.

My classic chili recipe in celebration of National My classic chili recipe in celebration of National Chili Day 🌶️❤️‍🔥 If you’re looking for a go to chili recipe, give this one a try and let me know what you think! 

Ingredients:
2 tbsp olive oil
1 large yellow onion diced
.5 -1 jalapeño diced, seeds and stems removed, optional for heat
1 large green bell peppers finely diced
3 celery sticks finely diced
4 cloves of garlic minced
2 lbs ground beef(or ground meat of choice)
3 cups beef broth or vegetable broth
1 28 oz can crushed tomatoes or diced tomatoes with liquid 
1 16 oz can of kidney beans drained and rinsed
1 16 oz can of great northern beans or your favorite white bean drained and rinsed
1 16 oz can of tomato sauce. 
1 tbsp tomato paste
Splash of balsamic vinegar or Worcestershire 

Chili seasoning:
3 tbsp chili powder
2 tbsp cumin
1 tbsp cocoa powder(sugar free) adds depth 
1 tablespoon sugar
1/4 tsp Cayenne pepper, optional  for heat
1 tsp salt 
1 tsp ground black pepper

Optional Toppings:
Cheese, sour cream, green onion, cilantro, jalapeño 

Prep:
Combine all the chili seasonings in a small bowl and set aside.
Chop all the veggies and place in large mixing bowl. I like to chop mine small so that they melt together in the cooking process. For a chunky chili cut bigger pieces.

Instructions:
Over medium heat add a tablespoon of olive oil and brown the ground lamb. Drain fat and set aside.
Over medium heat, add olive oil to pot and sauté the veggies until softened. 
Mix in all the spices and tomato paste. And saute for a minutes to bring out the favor. 
Add back in the ground lamb and the  the remaining ingredients. 
Mix together and bring to a boil, then reduce to a simmer for 1 hour letting, stirring occasionally. 
Remove the pot from heat and let sit 5-10 minutes before serving.

🍋🧄A simple Lemon Garlic roast chicken that c 🍋🧄A simple Lemon Garlic roast chicken that comes out juicy every time. 

Make this instead of store-bought rotisserie chicken, that’s full of additives and injected solutions. Perfect for recipes like chicken salad.

Ingredients:
1 whole chicken (3–4 lbs)
2 tablespoons olive oil
1 cup of lemon garlic butter
3 lemons
1 head of garlic

Lemon garlic butter:
8oz softened salted butter
Zest of 1 lemon
5 garlic cloves grated
1 tsp onion powder
1 tsp salt
1 tsp mustard powder 
1/8 cup chopped parsley

Instructions:
1. Preheat oven to 425°F (220°C).
2. Line a baking dish or skillet with lemon slices.
3. Pat chicken dry, stuff the cavity with halved lemon and garlic head.
4. Loosen the skin and rub some under it; spread the rest over the outside.
5. Drizzle with olive oil and place breast-side up over the lemons.
6. Roast 1–1½ hours, basting every 30 minutes, until internal temp reaches 165°F.
7. Let rest 15 minutes before carving.
*Let chicken sit out at room temperature for about 30 minutes for a more even cooking.

This recipe is inspired by my friend’s @glitterandchopsticks I never heard of swim biscuits until she shared her recipe! And now I know why they’re called swim biscuits because they be swimming in butter that somehow magically absorbed by the batter. 😍🏊🏼‍♀️

Ingredients
Biscuits:
1 cup fresh blueberries
Zest of 1 lemon
1/4 cup granulated sugar
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 1/4 cups buttermilk
1 teaspoon vanilla extract
1/2 cup butter, melted

Glaze:
1 cup powdered sugar
Juice of 1 lemon

Instructions
Preheat oven to 450°F.
1. Pour the melted butter into a 9x9-inch baking dish.
2. In a large mixing bowl, Combine dry ingredients.
3. Add buttermilk and vanilla extract. Gently stir until just combined. Then stir in blueberries and lemon zest.
4. Pour the batter into the baking dish directly over the melted butter.
5. Use a knife to score the top into 9 squares, cutting all the way through so the butter rises and absorbs into each section.
6. Bake for 30 minutes, or until golden brown and fully cooked in the center.
7. While the biscuits bake, whisk together powdered sugar and lemon juice to make the glaze.
8. Drizzle glaze over warm biscuits and serve.

Homemade Chipotle Vinaigrette that’s better than Homemade Chipotle Vinaigrette that’s better than Chipotle’s 🌶️🫙🔥
This super easy copycat recipe of Chipotle’s vinaigrette is one of my favorite sauces to have in the fridge. You can put it over salads, tacos, bowls, and sandwiches. I promise you won’t regret making it. 🤌🏽

Ingredients:
1/4 cup red wine vinegar
3 Tbsp honey
1/4 cup water
1/2 cup neutral oil (I use avocado oil)
1/2 Tbsp salt
1/2 tsp. ground black pepper
1/4 tsp. dried oregano
2 garlic cloves
2-3 chipotle peppers in adobo sauce(the more, the spicier)
Juice from 1/2 lime

-Add all ingredients into a blender and blend until thickened and combined.
-Store in an airtight container in the fridge for up to a week. If it lasts that long 🙃

1 chicken breast sliced
Top with pickled red onions

Calabrian Chili Ricotta Pasta w/ Shrimp 🦐🍋🌶️

Ingredients:
1 lb shrimp peeled and deveined 
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive oil 
1/2 lemon juiced
1/2 onion diced
Zest of 1/2 lemon
3 cloves of garlic minced
2-3 tablespoons Calabrian chili paste
15 oz ricotta 
1/4 cup parsley chopped
8 oz pasta 
1/4 cup or more reserved pasta water
Parmesan cheese for topping 

Instructions
1. Pat shrimp dry and toss with garlic powder, salt, and pepper.
2. In a large skillet, heat olive oil over medium-high heat. Add shrimp and lemon juice, cook until pink and just cooked through. Set aside.
3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain.
4. In the same skillet, sauté the diced onion and garlic until softened. Turn off the heat and stir in ricotta, lemon zest, Calabrian chili paste, and a pinch of salt. Mix until smooth.
5. Add the cooked pasta, half the shrimp, and reserved pasta water to the sauce. Toss until evenly coated and creamy.
6. Top with the remaining shrimp, freshly grated Parmesan, chopped parsley, and lemon slices if desired. Serve immediately.

Infused with a homemade basil simple syrup, this version is the ultimate sip for spring. 

Ingredients: 
2 oz limoncello
1 oz basil simple syrup
4 oz Prosecco
Club soda to top
Ice cubes
Fresh basil leaves and lemon slices, for garnish

Basil Simple Syrup:
1 cup water
1 cup granulated sugar
1 cup fresh basil leaves, packed

-Make the Basil Simple Syrup: Boil 1 cup water and 1 cup sugar until dissolved. Remove from heat, add 1 cup fresh basil, and steep for 30 minutes. Strain and cool.
-Mix the Cocktail: In a glass, combine 2 oz limoncello, 1 oz basil syrup, and ice. Add 3 oz chilled Prosecco and a splash of club soda.
-Garnish and Serve: Top with fresh basil and a lemon slice.

This insanely flavorful and creamy stroganoff comes together in one pan. Served with rice and crispy potato sticks, it’s the ultimate Brazilian Comfort food! ❤️‍🔥

Ingredients:
* 1 Tbsp olive oil
* 2 lbs chicken breast cut into bite sized pieces
* 2 tablespoon of butter
* 1 medium onion, diced
* 4 cloves of garlic, minced
* 8 oz white or cremini mushrooms, sliced
* 6 oz tomato paste
* 1 teaspoon sugar
* 1 tablespoon balsamic vinegar 
* 2 cups heavy cream or coconut milk
* salt and pepper to taste

Crispy potato sticks:
1 shredded russet potato or pre shredded hashbrowns
2 tablespoons cornstarch to coat
Pinch of salt

Instructions:
1. Season chicken with 1/2 tsp salt and 1/2 tsp pepper. Let sit at room temp for 30 mins.
2. Sauté onions in 2 tbsp butter until translucent. Add chicken and garlic, cook until chicken is browned.
3. Stir in mushrooms and cook until softened.
4. Add tomato paste, sugar, and balsamic vinegar. Stir, then slowly add cream or coconut milk for a creamy sauce.
5.Simmer on low for 10-15 mins until chicken is cooked through and sauce thickens. Adjust salt and pepper (suggested: 1 tsp salt, 1/2 tsp pepper).
6.Optional Topping: Fry shredded, cornstarch-coated potato with salt until crispy, or use store-bought potato sticks.

Fresh carrots gives this cake its natural orange color. Topped with a rich chocolate ganache, this is hands down my favorite cake of all time! My husband introduced me to this 🇧🇷 cake (aka Bolo de Cenoura in Brazil) when we first met and it may or may not be the reason I married him 🙃

This cake recipe comes together so easy in a blender. Yes, a blender! 

Ingredients:
* 11 oz carrot chunks
* 3 large eggs
* 1.5 cups of sugar 
* 1 teaspoon vanilla extract
* 1/3 cup of milk, any kind (I use my homemade cashew milk)
* 3/4 cup of olive oil
* 2 tablespoons Greek yogurt, sour cream, or crème fraîche
* Pinch of Salt
* 2 cups of all-purpose flour, sifted
* 1 tablespoon of baking powder, sifted
* 1 teaspoon baking soda, sifted
* A pinch of salt
Chocolate Brigadero Ganache:
* 6 ounces of semi sweet chocolate 
* 1 can, 14 ounces sweetened condensed milk
* 2 tablespoons unsalted or salted butter, I prefer salted
* Splash of milk

1)Preheat oven to 350°F and grease a 10-inch bundt pan.
2)Blend carrots, eggs, sugar, milk, vanilla, and salt until smooth (20–30 sec).
3)Pour into a bowl, whisk in oil, then sift in flour, baking powder, and soda. Mix until just combined.
4)Pour batter into pan and bake for 45 minutes or until a toothpick comes out clean.
5)Cool 20–30 minutes, loosen edges, and invert onto a rack.
6)For brigadeiro: cook chocolate, sweetened condensed milk, and butter over medium-low, stirring until thick (about 10 min). Add milk if needed.
7)Place cake on a platter, pour brigadeiro over, and in the center to make a chocolate pool. Let set before serving.

Grilled Romaine with blue cheese, candied pecans, Grilled Romaine with blue cheese, candied pecans, and champagne vinaigrette paired with @ranchersdaughtersreserve grass fed top sirloin 👌🏽

I wanted to recreate this salad I had years ago at @yardhouse -one of the most impressive combinations that I can’t stop thinking about even after all these years. And I had to pair it with my favorite Kauai grass fed beef for some added protein. 

Grilling the romaine gives it a nice charred flavor paired with creamy blue cheese and sweet candied pecans, and elevating it with a champagne vinaigrette… I can’t even explain how this taste just trust!!!

I hope you LOVE it as much as I do!

Ingredients:
1 head of romaine lettuce
Blue cheese 
Candied pecans
Champagne vinaigrette(I use Girard’s)
1 10 oz top sirloin steak
Olive oil 
Salt and pepper to taste
2 tablespoons avocado oil
garnish with fresh thyme. 

Romaine:
-wash, dry and cut in half
-brush with olive oil
-sear each side on medium high for two minutes and set aside

Top Sirloin:
-Bring to room temperature and sprinkle fresh, grated sea salt, and black pepper on both sides
-Coat with olive oil
-Heat a neutral oil like avocado oil on high in a cast iron skillet.
-For medium rare, sear one side for three minutes then brown the edges. Flip and cook the other side for 2-3 minutes and let rest for 10 minutes before slicing.

These are hands-down, the best I’ve ever had! Sweet, salty, nutty, and full of umami 😘🤌🏽

They are so easy to make, coming together in under 10 minutes. Give them a try and let me know what you think 👇🏽

Ingredients:
1 stick 4 tablespoons unsalted butter
1 tablespoon miso
1 bag of mini marshmallows (10oz)
6 cups Rice Krispies
2 tablespoons furikake (optional)

1)Line 8x8 baking pan with parchment paper 
2)Brown butter on low heat and mix in miso paste, then add in and melt the marshmallows. Turn off heat.
3)Pour in the Rice Krispies and furikake and mix to combine.
4)Spread evenly in the lined baking pan and push down to compact let cool,cut,and enjoy!

The perfect spring appetizer for your next gathering or something special to self indulge 😘🤌🏽

Ingredients:
2 cups cherry or grape tomatoes 
2 tablespoons minced garlic
1/4 cup olive oil 
Fresh thyme
1/2 tsp red chili flakes 
1/2 tsp smoked paprika 
A pinch of sea salt
1 cup or more ricotta 
Salt and pepper to taste

-Combine the first 7 ingredients and roast uncovered in the oven at 300F for 1 hour 
-Broil on low for an additional 3 to 5 minutes for a charred look 
-Spread the ricotta on the bottom of a serving dish. Sprinkle salt and pepper and top with the roasted tomatoes.
-Serve with a toasted baguette or crackers

*Cooking low and slow and ensures that the tomatoes and garlic don’t burn and brings out the tomatoes natural sweetness.

Chicken cutlet salad 🍗🥗 A juicy, crispy frie Chicken cutlet salad 🍗🥗
A juicy, crispy fried chicken cutlet topped with your favorite salad and a squeeze of lemon. It’s hard not to get addicted to this one! 

Ingredients
Cutlets:
1 chicken breast cut in half and flattened 
1/3 cup each: AP flour, heavy cream, panko breadcrumbs 
2 cup avocado oil 
Seasoning:
1tsp each: salt, ground, black pepper, mustard powder, smoked paprika, garlic powder.
Salad:
Romaine lettuce thinly sliced
1/2 shallot thinly sliced
Chopped parsley
Caesar dressing
Grated Parmesan 
Lemon wedges

1)cut the chicken breast in half and flattened with a meat tenderizer. Cutlet should be 1/2 of an inch or less thick.
2)season each side with seasoning mix
3)set up your dredging station and completely coat each cutlet with flour, heavy cream, then panko. Let’s sit for at least 15 minutes for the coding to adhere.
4)heat oil on medium high until 375F. Carefully place each cutlet in the oil and let cook for about three minutes on each side until the crust has become golden brown and chicken has internal temperature of 165F.
5)remove from oil and place on a paper towel lined plate. Immediately sprinkle salt. And let cool for 5 minutes.
6)Combine all salad ingredients and place desired amount on top of chicken. Top with freshly grated Parmesan and a squeeze of lemon.

* I’ve been using heavy cream as a substitute for egg wash, and I must say I like it better. It tenderizes the chicken a little bit more, leaving it juicy and soft. But if you don’t have heavy cream, you can use an egg wash.

Ingredients:
2 tbsp olive oil
1 large yellow onion diced
.5 -1 jalapeño diced, seeds and stems removed, optional for heat
1 large green bell peppers finely diced
3 celery sticks finely diced
4 cloves of garlic minced
2 lbs ground beef(or ground meat of choice)
3 cups beef broth or vegetable broth
1 28 oz can crushed tomatoes or diced tomatoes with liquid 
1 16 oz can of kidney beans drained and rinsed
1 16 oz can of great northern beans or your favorite white bean drained and rinsed
1 16 oz can of tomato sauce. 
1 tbsp tomato paste
Splash of balsamic vinegar or Worcestershire 

Chili seasoning:
3 tbsp chili powder
2 tbsp cumin
1 tbsp cocoa powder(sugar free) adds depth 
1 tablespoon sugar
1/4 tsp Cayenne pepper, optional  for heat
1 tsp salt 
1 tsp ground black pepper

Optional Toppings:
Cheese, sour cream, green onion, cilantro, jalapeño 

Prep:
Combine all the chili seasonings in a small bowl and set aside.
Chop all the veggies and place in large mixing bowl. I like to chop mine small so that they melt together in the cooking process. For a chunky chili cut bigger pieces.

Instructions:
Over medium heat add a tablespoon of olive oil and brown the ground lamb. Drain fat and set aside.
Over medium heat, add olive oil to pot and sauté the veggies until softened. 
Mix in all the spices and tomato paste. And saute for a minutes to bring out the favor. 
Add back in the ground lamb and the  the remaining ingredients. 
Mix together and bring to a boil, then reduce to a simmer for 1 hour letting, stirring occasionally. 
Remove the pot from heat and let sit 5-10 minutes before serving.
