Ingredients!
Queso:
- 1 cup cottage cheese
- 1 cup shredded Mexican Blend Cheese
- 2 tablespoons canned diced green chilis(drained)
Taco Seasoning:
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/8 teaspoon cayenne pepper(optional for spice)
Pico de Gallo topping:
- 1/8 cup diced tomato
- 1/8 cup diced red onion
- 2 tablespoon chopped cilantro
- squeeze of lime
Instructions:
- Start by blending 1 cup of cottage cheese in a food processor or blender. It should be a creamy and smooth consistency almost like sour cream.
- Place in a microwave safe bowl along with the diced chilis, taco seasoning, and 1/2 cup of shredded cheese and mix to combine.
- You can use 1 tablespoon store bought taco seasoning in place of the homemade.
- Top with remaining shredded cheese.
- Microwave for 1.5 minutes or until the cheese on top has fully melted.
- Top with pico de gallo.
- Serve with tortilla chips or use as a topping on tacos/quesadillas!
