Chili Cottage Cheese Queso

Ingredients
  

Queso:

  • 1 cup cottage cheese
  • 1 cup shredded Mexican Blend Cheese
  • 2 tablespoons canned diced green chilis drained

Taco Seasoning:

  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper optional for spice

Pico de Gallo topping:

  • 1/8 cup diced tomato
  • 1/8 cup diced red onion
  • 2 tablespoon chopped cilantro
  • squeeze of lime

Instructions
 

  • Start by blending 1 cup of cottage cheese in a food processor or blender. It should be a creamy and smooth consistency almost like sour cream.
  • Place in a microwave safe bowl along with the diced chilis, taco seasoning, and 1/2 cup of shredded cheese and mix to combine.
  • You can use 1 tablespoon store bought taco seasoning in place of the homemade.
  • Top with remaining shredded cheese.
  • Microwave for 1.5 minutes or until the cheese on top has fully melted.
  • Top with pico de gallo.
  • Serve with tortilla chips or use as a topping on tacos/quesadillas!
