Chili Cottage Cheese Queso

Queso:
- 1 cup cottage cheese
- 1 cup shredded Mexican Blend Cheese
- 2 tablespoons canned diced green chilis drained
Taco Seasoning:
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/8 teaspoon cayenne pepper optional for spice
Pico de Gallo topping:
- 1/8 cup diced tomato
- 1/8 cup diced red onion
- 2 tablespoon chopped cilantro
- squeeze of lime
Start by blending 1 cup of cottage cheese in a food processor or blender. It should be a creamy and smooth consistency almost like sour cream.
Place in a microwave safe bowl along with the diced chilis, taco seasoning, and 1/2 cup of shredded cheese and mix to combine.
You can use 1 tablespoon store bought taco seasoning in place of the homemade.
Top with remaining shredded cheese.
Microwave for 1.5 minutes or until the cheese on top has fully melted.
Top with pico de gallo.
Serve with tortilla chips or use as a topping on tacos/quesadillas!
