This Shrimp and Burrata Red Pesto Pasta takes under 30 minutes to make and only needs a handful of ingredients.
Let’s do this!
Ingredients!
- 1 pack of your favorite pasta (I used penne)
- 1 pound (450g) of fresh shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 medium onion diced
- 1 container of red pesto (usually around 10 oz)
- 1/8 – 1/4 teaspoon of red chili flakes depending on your spice tolerance
- Salt and pepper to taste
- 1/4 cup of heavy cream
- 8 ounces (225g) of burrata cheese
- Fresh basil leaves
The key player of this dish is the Red Pesto AKA Sundried Tomato Pesto. Sun-dried tomato pesto is a flavorful and versatile sauce that adds a burst of intense tomato flavor to a variety of dishes. It is made by blending sun-dried tomatoes with other ingredients such as herbs, garlic, olive oil, nuts, and cheese. The result is a rich, tangy, and slightly sweet pesto that can be used as a spread, sauce, or condiment. I use store bought for this dish because it saves time and money!
Instructions:
- Prep:
- Dice the onions, mince the garlic, and chop the basil.
- Pat dry shrimp with a paper towel and season with salt and pepper
- Cook the pasta:
- Begin by bringing a large pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a small amount of pasta water, and set aside.
- Sauté :
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for approximately 3 minutes or until it starts to turn translucent. Add minced garlic and red chili flakes, sauté for about 1 minute until fragrant. Then, add the shrimp to the skillet and cook for approximately 1 minutes per side until they turn pink. The shrimp will continue to cook when adding the rest of the ingredients so be careful not to overcook in this stage.
- Prepare the sauce:
- In the same skillet, Stir in the red pesto sauce and chopped basil and cook for an additional 2 minutes, allowing the flavors to meld together. Add the heavy cream and more salt and pepper to taste.
- Combine the ingredients:
- Add the cooked pasta to the skillet with the sauce along with 1/4 cup of pasta water, tossing gently to coat the pasta evenly. Allow the pasta to simmer in the sauce for a minute or two to absorb the flavors. Remove from heat.
- Serve and garnish:
- Plate the pasta and place your burrate on top along with some chopped basil for garnish. Cut open your burrata to reveal the soft and creamy center.
You won’t believe the magic that happens when you bring together the juiciness of shrimp, the creaminess of burrata cheese, and the tangy kick of red pesto!
