Shrimp & Burrata Red Pesto Pasta

The combination of succulent shrimp, creamy burrata cheese, and tangy red pesto creates a symphony of flavors that will leave you craving for more. This dish is perfect for impressing guests at dinner parties or simply treating yourself to a gourmet meal at home.

Equipment

  • 1 large saute pan
  • 1 large pot and strainer

Ingredients
  

  • 1 pack pasta of choice any pasta would work for this dish!
  • 1 lb peeled and deveined shrimp
  • 2 tbsp olive oil
  • 1 medium diced yellow onion
  • 4 cloves minced garlic
  • 1 handful fresh basil, chopped
  • 1/8-1/4 tsp red chili flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 jar red pesto usually around 10 oz
  • 1/4 cup heavy cream
  • 1-4 burrata i use 1 per serving

Instructions
 

* Prep:

  • * Dice the onions, mince the garlic, and chop the basil.
  • * Pat dry shrimp with a paper towel and season with salt and pepper

* Cook the pasta:

  • * Begin by bringing a large pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a small amount of pasta water, and set aside.

* Sauté :

  • * In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for approximately 3 minutes or until it starts to turn translucent. Add minced garlic and red chili flakes, sauté for about 1 minute until fragrant. Then, add the shrimp to the skillet and cook for approximately 1 minutes per side until they turn pink. The shrimp will continue to cook when adding the rest of the ingredients so be careful not to overcook in this stage.

* Prepare the sauce:

  • * In the same skillet, Stir in the red pesto sauce and chopped basil and cook for an additional 2 minutes, allowing the flavors to meld together. Add the heavy cream and more salt and pepper to taste.

* Combine the ingredients:

  • * Add the cooked pasta to the skillet with the sauce along with 1/4 cup of pasta water, tossing gently to coat the pasta evenly. Allow the pasta to simmer in the sauce for a minute or two to absorb the flavors. Remove from heat.

* Serve and garnish:

  • * Plate the pasta and place your burrata on top along with some chopped basil for garnish. Cut open your burrata to reveal the soft and creamy center.
