Shrimp & Burrata Red Pesto Pasta

1 large pot and strainer
- 1 pack pasta of choice any pasta would work for this dish!
- 1 lb peeled and deveined shrimp
- 2 tbsp olive oil
- 1 medium diced yellow onion
- 4 cloves minced garlic
- 1 handful fresh basil, chopped
- 1/8-1/4 tsp red chili flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 jar red pesto usually around 10 oz
- 1/4 cup heavy cream
- 1-4 burrata i use 1 per serving
* Prep:
* Dice the onions, mince the garlic, and chop the basil.
* Pat dry shrimp with a paper towel and season with salt and pepper
* Cook the pasta:
* Begin by bringing a large pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a small amount of pasta water, and set aside.
* Sauté :
* In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for approximately 3 minutes or until it starts to turn translucent. Add minced garlic and red chili flakes, sauté for about 1 minute until fragrant. Then, add the shrimp to the skillet and cook for approximately 1 minutes per side until they turn pink. The shrimp will continue to cook when adding the rest of the ingredients so be careful not to overcook in this stage.
* Prepare the sauce:
* In the same skillet, Stir in the red pesto sauce and chopped basil and cook for an additional 2 minutes, allowing the flavors to meld together. Add the heavy cream and more salt and pepper to taste.
