Instructions
Step 1: Roast the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly, then wrap them in aluminum foil and place them on a baking sheet. Roast for about 45 minutes to an hour, or until the beets are fork-tender. Once done, let them cool before peeling and chopping them into small pieces.
Or make it easier by buying already cooked beets!
Step 2: Whipping the Ricotta
In a food processor or blender, combine beets, ricotta, garlic, olive oil, lemon zest, lemon juice, & salt. Blend the mixture until smooth and creamy, ensuring the pink color is evenly distributed throughout the ricotta.
Step 3: Prepare the Toast
Over medium heat, add olive oil or butter to a skillet and toast your bread. (Or in toaster oven)
